My Wife and I use a similar recipe and what we do before boiling the squash is my wife pits in in the oven and bakes the squash along with the onion. This gives the soup more of a "nutty" flavor. Sure is good on a cool night.
I have been using this recipe for a few years and always return to it for a satisfying low point option. I usually spice it up with a bit of curry powder.

Mmmmmmm, delicious autumn soup! I doubled the amount of squash, used whole apple with skin (washed and cored) and tripled the cinnamon, also used whole Visalia onion. Wonderful first course at dinner. Will make again soon be it is going fast!
